Nakiska Puff Pancakes
These are requested often. Give them a try - but the best idea is to come
and let us fix them for you.
Use a shallow ovenproof dish for each serving that will
hold about 2 cups. Or use a 9" pie plate and cut the pancake in wedges to serve.
For 3 servings: 4 eggs, 1 cup milk, 1 cup flour. 1/4 t.
salt, and a little melted butter.
Beat eggs, add other ingredients. Pour into buttered dishes
and bake at 375º for 25 minutes until puffed and brown. DO NOT OPEN OVEN DOOR while
baking. Remove from oven, transfer to plates and serve immediately with your favorite
topping of:
---Cherry sauce & plain yogurt. Sweeten with maple syrup.
---Fresh Strawberries & whipped cream
---Maple syrup and butter
---Caramalized apples
Broiled Grapefruit
Try this easy recipe for grapefruit that even grapefruit haters have
enjoyed.
Halve and section a grapefruit. Drizzle with a tablespoon of maple syrup.
Sprinkle with cinnamon. Broil until bubbly. - Watch carefully. Enjoy. The maple syrup
mellows the flavor and starts the day off well.
Seasoned Scrambled Eggs
A simple way to elevate eggs from ordinary
Beat eggs and add about 1T plain yogurt per egg. Season with salt,
pepper, and Ms. Dash. A little cayenne pepper adds a flavor sparkle. The texture is tender
and they puff a little as they cook.
Tip of the Day
This may be obvious to everyone else, but I just discovered that
those pesky adhesive labels can be removed easily if they're heated a bit with a hair
dryer!
